First, I must apologize for being a space cadet and not including the recipe in my last post. Second, I must apologize for taking this long to post it. I'm sure you know how it is when the days just get away from you.  The recipe is for Cinnamon Rolls but a variation was added at the bottom and I altered it to appease my appetite for citrusy foods. Plus, I had to combine a couple of recipes mainly because the first recipe given to me didn't have a lot of added instructions and I liked the recommendations of this other. Okay. Here we go.

Orange Rolls

  • 2 C Milk
  • 1/2 C butter
  • 2 T yeast
  • 1/4 C warm water
  • 1 C mashed potatoes
  • 2 eggs slightly beaten
  • 1 C sugar
  • 2 t salt
  • 7 C flour (approx.)
  • 1/2 C melted butter
  • 3-4 heaping T frozen orange juice concentrate
  • 2 t orange zest (or to taste)
Heat milk and butter in pan on the stove or in the microwave until luke warm. Dissolve yeast in warm water with a teaspoon of the one cup of sugar. Add to the milk mixture with the eggs, sugar, salt, mashed potatoes and 4 C flour. Mix with mixer and slowly add the remaining flour to make a soft dough. Stir until just combined. Cover and allow to raise (in a warm place) until double about 45 minutes - 1 hour. Roll dough in a rectangle 1 - 1 1/2 inches thick. Spread with melted butter, frozen OJ, orange zest and sprinkle with granulated sugar. Roll and cut into slices. Place on sprayed cookie sheet and cover. Let rise (in a warm place) until double; 45 minutes - 1 hour. Bake at 350 degrees for 20 minutes, until golden brown. Don't allow rolls to become overly brown. While those are baking, make the icing.

  • 4 C powdered sugar
  • 1/2 C butter
  • 1 t vanilla
  • 3 T milk
  • 1/4 C orange juice
Mix powdered sugar and butter. Add vanilla, milk and OJ. Beat until smooth and creamy. While the rolls are still warm, generously drizzle icing over the top. Be sure to get it all around the edges and over the top.

Makes 18 large or 24 regular cinnamon rolls.

Now step to it!! :p
